Blueberry Crunch Coffee Ring

Ingredients

1 1/2 C Almond flour
1 C Splenda granular
1 T Baking powder
1/2 t Salt
1/4 t Ground nutmeg
1/3 C Butter - firm
1/2 C Fresh blueberries
1 Egg
1/2 C Heavy cream
1 t Vanilla


WALNUT STREUSEL TOPPING:

1/2 C Walnuts (finely chopped)
1/2 C Brown sugar twin granular
2 T Almond flour
2 t Ground cinnamon
2 T Butter, melted

Directions

Preheat oven to 350 F degree.



Prepare walnut streusel:



Mix 1/2 C of finely chopped walnuts, 1/2 C brown sugar twin granular, 2 T almond flour, 2 t ground cinnamon with the 2 T melted butter.



Pat about half the streusel into a greased, and almond flour dusted 9 inch springform pan set aside.



In a large bowl, stir together almond flour, splenda granular, baking powder, salt and nutmeg.



Using a pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs.



Gently stir in blueberries.



Beat the egg lightly with cream and vanilla. Stir into the berry mixture just until combined.



Spread half the batter into the streusel-lined pan.



Sprinkle with remaining streusel.



Top with the remaining batter.



Bake in a 350 F degree oven until a pick inserted in center comes out clean (45 to 60 minutes).



Let cool in pan for 20 minutes, then remove pan sides.
