Coconut-Pecan Mock Sweet Potatoes

Ingredients

2 lbs Canned real pumpkin (not sweetened)
1/3 C Brown sugar twin granular
1/4 C Butter, melted
1/4 C Unsweetened coconut
1/4 C Chopped pecans, toasted
1/2 t Ground Cinnamon

1/4 t Coconut extract
1/4 t Vanilla extract

Toasted unsweetened coconut as a garnish (optional)

Directions

In a crockpot, combine pumpkin, brown sugar twin granular, butter, coconut, pecans, and cinnamon.



Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.



Stir in the coconut and vanilla extracts.



Sprinkle with toasted coconut.
