Ingredients

5 Squares unsweetened baking chocolate
6 T Unsalted butter
Extra butter to grease muffin tins
4 C Splenda granular

3 C + 6 T Heavy Whipping cream
24 ozs Cream cheese
3 T Unsweetened cocoa powder
6 T Sugar free peanut butter

Directions

Grease 24 muffin cups with butter and place tins in freezer.



Melt unsweetened chocolate with 6 T of butter.



Stir in 3 T of heavy cream and 1 C splenda granular.



Divide the mixture among the muffin tin cups and rotate tin as you do so that a thin layer of chocolate is evenly distributed on the bottom and a good inch or so up each of the sides to form a cup. If your mix is too thick to do this easily add additional butter until it is pourable. Work quickly so that the muffin pan does not cool off too much. If it does, simply return it to the freezer and place your chocolate mixture over another bowl of hot water to keep it pliable until you begin again.



Whip 3 C of heavy cream until stiff peaks form and set aside.



Cream the room temperature cream cheese, splenda, peanut butter, and cocoa powder very well and until smooth.



Fold the whipped cream into the cocoa mixture. Don't overwork it, you want veins of cream running through the mixture.



Spoon mixture evenly into each of the muffin tin cups you coated with chocolate and smooth the top surface. Chill thoroughly.



To unmold: place pan briefly into 1 inch of hot water, then invert onto a plate. Quickly turn desserts upright.

Additional Information

I found this a very long time ago somewhere and cannot remember where. The name is justly deserved! Tastes just like peanut butter cups on steroids.
