Ingredients

3 ozs Butter
Pinch of salt
4 Eggs
1/4 C Soy flour
1/4 C Heavy cream

Cinnamon
1/4 t Lemon extract or 1 T fresh lemon juice
4 Packets of Splenda

Directions

Preheat oven to 425 F degrees.



Melt 2 ozs butter in a pie plate in the oven.



Mix salt, eggs, soy flour and cream together in a blender and blend well.



Pour into pie pan.



Bake at 425 F for 8 minutes, then at 275 F for 7 minutes. It should look like a big egg bowl with puffed up sides.



Dot additional butter in the eggs dish. Sprinkle with cinnamon to taste. Sprinkle lemon extract or juice and the splenda over egg dish.



Roll up pancake and sprinkle with more splenda and cinnamon.
