Cajun Cauliflower Salad

Ingredients

1 T Butter
1 T Garlic, minced
1 Bunch green onions, tops only
1 lb Crawfish tails
1/2 T Liquid smoke
1 T Worcestershire sauce
1 lb Bacon, cooked & crumbled

2 1/2 lbs Cauliflower, cooked crisp-tender
8 ozs Mayo
6 Hard boiled eggs, yolks and whites separated. whites chopped, leave yolks whole
1/2 C Creole mustard
1 T Tabasco sauce
Salt to taste
Pepper to taste

Directions

In skillet, melt margarine over medium heat. Add garlic and green onions, cook until wilted.



Add crawfish tails, liquid smoke, and worcestershire sauce.



Cook for 15 minutes, cool. Add bacon and set aside.



Mix cooked cauliflower, mayo and egg whites in a large bowl.



In a separate bowl mash egg yolks and mix with mustards and tabasco sauce.



Combine mustard mixture and cauliflower mixture. Stir in crawfish.



Salt & pepper to taste.
