Deep Fried Chicken Fingers

Ingredients

1/2lb chicken tenders
1/4c Atkins Baking Mix
1/4c parmesan cheese
1tsp garlic salt
1 egg
cooking oil


Directions

Heat about an inch of oil in a large skillet suitable for frying. Mix dry ingredients and set aside. Beat the egg. Use the egg to coat the chicken pieces and then coat with the dry mixture. Carefully add chicken to the hot oil. Fry about 5 minutes and place on a rack or paper towel to absorb any excess oil.
