Ingredients

1/2 cup carrot chopped
2 Tbsp red onion chopped
8 ounces cheddar cheese shredded
2 1/2 cups green cabbage thinly sliced
2 1/2 cups red cabbage thinly sliced
1 tbsp cider vinegar
2 tbsp Liquid Stevia Extract
1/2 cup mayonnaise
1/4 tsp celery seed
salt & pepper to taste

Directions

Mix vegetables and cheese together in a bowl. Mix stevia blend, vinegar, mayonnaise and celery seed in a separate bowl. Stir into vegetables. Season with salt and pepper.

Additional Information

I also just get the pre-shredded cabbage in a bag too. It saves time.

Also if you can make ahead and let it sit in the fridge for about 2 hours it's better.

I never heard of putting cheese in cole slaw before, but tried it at a local bbq place. I looked around until I found a recipe and modified it to my taste.
