Zucchini Soup

Ingredients

3 Medium zucchini, sliced
3 T Chopped onion
4 C Chicken broth
1/4 t Italian seasoning
1 8 oz Package cream cheese
Salt and pepper to taste

GARNISH:

Thin lemon slices
Whipped cream

Directions

Put zucchini, onion, broth, and seasoning in a deep skillet. Simmer until tender crisp.



Blend with cream cheese in a blender or food processor.



Take care not to fill blender more than half full when blending ingredients.



Add salt and pepper to taste and serve warm.
