Chicken Okra Gumbo

Ingredients

6 lbs chicken pieces
1 Large onion
32 ozs Canned tomatos
1 1/2 lbs Okra, cut into bite sized pieces
1 lb Crabmeat, cooked chopped into pieces.
1 Small cheesecloth bag filled with bay leaves
Salt & pepper to taste

Directions

Fry chicken in olive oil until half done. Remove from pan.



Add chicken to large soup pot, add 3 quarts of water, the onion, and bring to boil. Simmer chicken until done.



De-b9ne chicken and cut into small pieces, removing all bones.



Return chicken to pot.



Add the tomatoes and okra.



Add the small bag of bay leaves to pot.



Cook gumbo at least 4 hours, simmering on low.



Just before serving, add crabmeat and season with salt and pepper and remove bay leaves.
