Spinach Spoonbread

Ingredients

1 Mediumn onion, chopped
1/2 C Heavy cream
1 (10 oz) Package frozen chopped spinach
2 Eggs, beaten
1 C Sour cream
1/2 t Salt
1 Package Atkins corn muffin mix
1/2 C Cheddar cheese, shredded

Directions

Cook spinach, drain well.



Saute onion until crisp-tender. Set aside.



In large mixer bowl combine all ingredients.



Pour into greased 1 1/2 quart casserole dish. Bake at 350F degrees for 30 - 35 minutes.
