Flounder Florentine

Ingredients

6 T Butter
1/4 C Onion, minced
1 Package (10 oz) Frozen chopped spinach, cooked and drained
3/4 t Marjoram
1/2 t Salt
1/4 t Pepper

2 lbs Flounder fillets
1/2 C White wine
1/2 t Dry mustard
1 t Xantham gum
1 C Heavy cream
Parmesan cheese
Paprika
Watercress

Directions

Melt 3 tablespoons butter in skillet.



Add onion and saute until tender.



Stir in spinach, marjoram, 1/4 t salt and 1/8 t pepper.



Put 1 1/2 tablespoons spinach mixture on each fillet and roll up. Put seam side down in baking dish.



Add wine.



Cover and bake 25 minutes at 350F degrees.



Drain and serve 1/2 cup liquid.



Keep fish warm.



Melt remaining butter, add xantham gum, salt, remaining pepper, and mustard.



Add reserved liquid and cream.



Stir until thick and almost boiling.



Pour over fish.



Sprinkle with parmesan. Garnish with paprika and watercress.
