Green & Gold Squash

Ingredients

1 Medium onion, chopped
2 T Oil
1 lb Zucchini, shredded coarsely
1 lb Yellow squash, shredded coarsely
2 T Parsley, chopped
1/2 t Salt
1/2 t Basil
1/4 t Pepper
3 Eggs, slightly beaten
1/2 C Heavy cream
1 C Sharp cheddar cheese, shredded
1/2 C Pork rinds, crushed

Directions

In large frying pan saute onion in oil until golden. Remove from heat.



Stir in next 6 ingredients.



Add eggs and cream.



Spoon 1/2 of the mixture into a 1 1/2 quart casserole dish.



Sprinkle with 1/2 of the cheese and 1/2 of the pork rind crumbs, repeat.



Bake uncovered at 325F degrees for 45 minutes.
