Chicken in Avocado & Bacon Sauce

Ingredients

6 Large boneless/skinless chicken breasts, cooked
2 Avocadoes, peeled & sliced
1/2 C Chicken stock
1/2 C Heavy cream
2 ozs Butter

1 Small onion, chopped
2 t Fresh, grated ginger
1/2 lb Bacon, cooked crispy and crumbled
Salt & pepper to taste
1 C Cheddar cheese

Directions

Pre heat oven to 400F degrees.



Saute onion with ginger and salt and pepper until transparent. Set aside.



In a blender or food processor puree avocado, chicken stock, and heavy cream. Add the onion mixture.



Place chicken in a baking dish. Pour sauce mixture over the chicken.



Sprinkle the bacon over the top.



Bake for 20 - 25 minutes until heated through.



Top with cheddar cheese and allow to melt and brown a little.
