Butternut Squash Casserole

Ingredients

1 Medium Butternut Squash
2 T Brown sugar twin
1/4 t Salt
1/2 t Cinnamon

1/2 t Nutmeg
2 T Butter
1 T Chives, chopped
Nutmeg for garnish

Directions

Heat oven to 350F degrees.



Cut squash into quarters, remove seeds.



Place cut side down in ungreased shallow baking pan. Bake at 350F degrees for 45 to 50 minutes or until tender. Cool slightly.



Grease 1 quart casserole.



Scoop squash pulp from skin and place in medium bowl. Discard skin.



Add brown sugar twin, salt, cinnamon, nutmeg and butter. Mix with a potato masher or fork until well blended.



Spoon into greased casserole dish. Sprinkle with chives and a little additional nutmeg.



Bake at 350F degrees for 20 to 25 minutes.
