Baked Spaghetti Squash

Ingredients

1 lb Prepared spaghetti squash
1 T Salt
1 Medium onion, chopped
4 T Olive oil
15 oz Can Tomato sauce
4 Cloves garlic, crushed
1/2 t Dried oregano
1 t Dried basil
2 Medium tomatoes, seeded & chopped
8 ozs Cheddar cheese, shredded
1/4 Crushed pork rinds
1 T Butter, melted

Directions

Prepare spaghetti squash using your favorite method.



Saute onion and garlic in olive oil until tender but not brown.



Add chopped tomatoes, tomato sauce, spices. Cook 20 - 25 minutes.



Grease large baking dish.



Place 1/2 the spaghetti squash in the greased dish.



Add 1/2 the cheese on top of the squash.



Next, add 1/2 the tomato sauce.



Add remaining squash, top with remaining sauce.



Place remaining cheese on top.



Mix crushed pork rinds with melted butter and place on top of casserole.



Bake at 350F degrees for 30 minutes.
