Ingredients

2 lbs Ground beef
1 t Salt
1 Medium onion, minced
1 t Dried oregano
15 oz Can tomato puree
1/2 t Black pepper
1 Small can tomato paste

20 ozs Frozen spinach, thawed and drained well
1 4 1/2 oz Can sliced mushrooms
16 ozs Cottage cheese
2 t Basil
8 ozs Mozzerella cheese
2 t Splenda

Directions

Cook ground beef with onion and salt & pepper to taste. Cook until no longer pink.



In a saucepan stir together the tomato puree, tomato paste, oregano, basil and splenda. Cook on medium until thickend, about 20 minutes.



Mix ground beef mixture with tomato sauce mixture.



Mix in the cottage cheese into the ground beef/sauce mixture.



Spoon into 13 X 9 X 2" casserole dish.



Top mixture with the well drained spinach.



Sprinkle the mozzarella cheese on top of casserole and bake in a 350F degree oven for 30 - 40 minutes (hot & bubbly).
