Ingredients

2 lbs Ground beef
1/2 C Crushed pork rinds
2 T Worcestershire sauce
1/2 t Pepper
Cheddar cheese, cut into eight 2" X 1" sticks

10 1/2 ozs Beef broth
1/2 Broth can water
1 Large onion, sliced
1 t Xantham gum (can use guar gum) for thickening gravy

Directions

In a medium bowl mix lightly but thoroughly beef, crushed pork rinds, worcestershire sauce and pepper. Shape into 8 oval patties, enclosing a cheese stick in the center of each patty. Make sure cheese is covered completely and tightly.



Brown patties in a little butter in a skillet.



In skillet with cover, bring broth and water to boiling, add patties to skillet. Surround patties with onions.



Simmer over low heat for 20 minutes.



Remove patties.



Blend xantham gum with a small amount of cold water. Stir mixture into skillet. Cook mixture, stirring until thickened.



Add meat and heat if necessary.

Additional Information

Seen served with mashed cauliflower.
