Kettle Goulash

Ingredients

4 T Bacon drippings
2 Onions, chopped
2 Green peppers, chopped
4 Garlic cloves, minced
1 1/2 T Hungarian Paprika
3 lbs Beef stew meat, cut into 1 inch cubes

Pepper to taste
Salt to taste
6 oz Tomato paste
1 C Sour cream (for garnish)

Directions

Preheat oven to 325F degrees.



Heat bacon fat in a deep heavy oven proof pot.



Cook the onions, peppers, and garlic until the onions are transparent.



Add paprika and cook about 10 minutes more.



Add beef and remaining ingredients except sour cream.



Stir well to combine.



Simmer stew in oven for 2 to 2 1/2 hours until meat is tender.



Serve in bowls topped with 2 T of sour cream.
