Beef Roast with Mushroom Stuffing

Ingredients

ROAST:

1/2 t Salt
1/4 t White pepper
2 lbs Flank steak
1 t Dijon mustard

MUSHROOM STUFFING:

2 T Olive oil
1 Onion, chopped
1 4 oz Can Mushroom pieces, drained
1/2 C Fresh parsley, chopped
2 T Chives, chopped
1 T Tomato paste
1/2 C Finely crushed pork rinds
1/4 t Salt
1/4 t Pepper
1 t Paprika


GRAVY:

6 Slices bacon, chopped
2 Small onions, finely chopped
1 C Beef broth, hot
1 t Dijon mustard
2 T Tomato puree

Directions

Lightly salt and pepper flank steak. Spread one side with dijon mustard.



To prepare stuffing heat olive oil in frypan, add onion and cook until lightly browned.



Add mushroom pieces, cook approximately 5 minutes. Stir in parsley, chives, tomato paste and pork rinds. Season with salt, pepper, and paprika.



Spread stuffing on mustard side of the flank steak. Roll up flank steak jelly roll fashion and tie with string.



To prepare gravy, cook bacon in a dutch oven until partially done.



Add the flank steak roll and brown on all sides, approximately 10 minutes.



Add onions and saute for 5 minutes.



Pour in the beef broth. Cover dutch oven and simmer for 1 hour.



Remove meat to a platter.



Season pan juices with mustard and salt & pepper to taste. Stir in the tomato puree.



Serve gravy on the side.
