Beef Tips In Red Wine Mushroom Sauce

Ingredients

2 lbs Beef sirloin, trimmed and cut into cubes
2 t Olive oil
1 Medium onion, chopped
2 C Mushrooms, sliced
2 Cloves garlic, crushed

1/2 t Dried thyme
1/4 t Black pepper
1/4 t Nutmeg
1/2 C Dry red wine
1 1/2 C Beef broth
2 T Chopped fresh parsley
1 t Xantham gum (guar gum can be used) for thickening

Directions

Brown beef cubes in the olive oil in a skillet over medium heat. Turn the cubes frequently to ensure even browning on all sides. Add the onions and cook 2 to 3 minutes longer. Add the mushrooms and garlic and reduce heat to medium low. Cook, stirring occasionally until mushrooms are browned.



Combine the xantham gum, thyme, black pepper, and nutmeg in a small dish. Sprinkle mixture over the meat and mushroom mixture, stirring well.



Stir in red wine and beef broth. Stir until liquid comes to a boil and thickens. Reduce heat to low, cover loosely and simmer for 20 minutes.



When done cooking, garnish with the parsley.
