Beef Stuffed Peppers with Cheese Sauce

Ingredients

4 Large green peppers
Salt to taste
5 T Butter
2 lbs Ground beef
1 Small onion, chopped

2 C Heavy cream
1 C Cheddar cheese, shredded
1 t Xantham gum (guar gum may be used) for thickening

Directions

Split the pepper lengthwise adn remove seeds.



Cook the peppers in a small amount of water for about 5 minutes, just until tender.



Drain well.



In a skillet melt 1 T butter and cook the beef and onion. Cook until meat is no longer pink.. Pour off excess fat.



Add 1 t salt and a 1/4 t pepper.



Fill the peppers with the meat mixture and arrange them in a shallow baking dish.



Melt the remaining butter and blend in the xantham gum. Gradually add the cream and cook, stirring with a whisk constantly until thickened.



Stir in the shredded cheese, a little at a time, giving each addition time to melt.



Check seasonings again.



Pour sauce over the stuffed peppers and bake in a preheated 350F degree oven for about 30 minutes.
