Chili Verde

Ingredients

4 lbs Lean pork
1 Onion, coarsely chopped
1 Green pepper, coarsely chopped
4 Cloves garlic, minced
1 Can dicced green chiles
2 Jalapenos, sliced
6 Tomatillos, husk removed, and diced

2 t Oregano
1 t Red chili peppers
2 t Sage
1 t Ground cumin
Black pepper to taste
1/2 C Beer
Salt to taste

Directions

Saute the onion and green pepper in olive oil. Add garlic. When just tender add to crockpot.



Add the green chiles, jalapenos, and tomatillos into the crockpot.



Trim off all the excess fat from the pork, cut into cubes and brown in a skillet. When meat is browned add to crockpot.



Add seasonings to crockpot.



Cook chili on low 8 to 10 hours.



When chili is done remove meat from crockpot and crisp it under the broiler.



Reduce the gravy in the crockpot. Add the meat to the sauce and stir.
