Italian Wedding Soup

Ingredients

2 lbs Ground beef
1/4 C Finely crushed pork rinds
2 Eggs
1 T Parsley

Salt & pepper to taste
8 C Chicken stock
4 C Fresh spinach leaves
1/2 C Fresh grated romano cheese

Directions

Combine the ground meat, pork rinds, egg, parsley, salt & pepper in a bowl. Mix well and form into tiny meat balls.



Bake meat balls on a cookie sheet for about 30 minutes at 350F degrees.



Meanwhile, bring broth to a boil and add spinach. Cover and boil for 5 minutes.



Add the meatballs to the hot broth, bring to a simmer.



Stir in the cheese and serve immediately.
