Maryland Cream of Crab Soup

Ingredients

1 T Butter
1 Small onion, chopped
2 Whole cloves
1 Bay leaf
3 C Heavy cream
1/8 t Ground nutmeg
1/8 t Cayenne pepper

1/2 lb Crabmeat
8 ozs Clam juice
1/4 C Dry sherry
1/4 C Chopped fresh chives
1 t Xanthan gum (for thickening)

Directions

Melt butter in heavy, large saucepan over medium heat. Add onion, cloves, and bay leaf, saute until onion is translucent.



Gradually whisk in heavy cream.



Simmer until slightly thickened, about 15 minutes.



Add xanthan gum to clam juice and mix well.



Add crabmeat, clam juice mixture, and sherry. Simmer again until thickened, about 15 minutes, DO NOT BOIL.



Add seasonings to taste.
