Cream of Spinach Soup

Ingredients

1 Bunch of fresh spinach
1/4 C Onion, minced
1/4 C Celery, chopped (including leaves)
1 T Butter
1 t Xanthan gum (for thickening)

3 C Chicken stock
1/2 C Heavy cream
1/4 C Dry sherry
1/4 t Nutmeg
Salt & white pepper to taste

Directions

Wash spinach and discard any thick stems.



Melt butter over medium heat. Add onion and celery and saute until onion is translucent.



Add chicken stock, stirring well. Heat until it starts to boil. Add spinach and simmer for 15 minutes. Remove from heat and allow to cool for 15 minutes.



Add xanthan gum to dry sherry and blend until well blended.



Using a food processor or blender puree the spinach mixture in batches until it is smooth with dark green flecks.



Return spinach mixture to medium heat, taste and correct seasoning. Stir in sherry mixture, cream, and nutmeg. DO NOT ALLOW TO BOIL. Serve immediately.
