Creamy Cheese Onion Soup

Ingredients

8 C Beef stock
2 Onions, halved & then sliced
Salt and pepper to taste
1 C Heavy cream
2 t Xanthan gum (for thickening)

1 1/4 C Cheddar cheese, shredded
1/4 C Monterey jack cheese, shredded

Directions

Heat beef stock to boiling.



Add onions to beef stock, bring down to a simmer.



Add salt & pepper to taste.



Bring the mixture back to boiling, turn heat down and simmer, uncovered for 1 hour.



Mix the xanthan gum with the cream and add to the soup mixture. Stirring gently until thickened.



Add one cup of the cheddar cheese to the soup mixture, simmer until melted.



Sprinkle each portion with additional cheddar and jack cheese on top.
