Cheesy Scalloped Cabbage

Ingredients

1/4 C Boiling water
1/2 t Salt
4 C Shredded cabbage
2 Eggs, beaten

1/4 C White vinegar
1/2 C mayonnaise
1 C Cheddar cheese, shredded
1 C Crushed pork rinds

Directions

Pre-heat oven to 350F degrees.



Add salt and cabbage to the boiling water and stir and boil for 3 minutes.



Remove from heat but do not drain.



In a bowl, combine eggs, vinegar and mayonnaise. Mix in the cabbage and cooking liquid.



Pour into a 1 quart casserole, top with cheese and crushed pork rinds.



Bake for 25 - 30 minutes.
