Beef Burger Mignon

Ingredients

FILETS:

2 lbs Ground round
1/2 C Crushed pork rinds
3 T Green onions, minced
2 T Parsley, minced
1 T Worcestershire sauce
1/4 C Beef stock
6 T Butter
1 t Seasoned salt
6 Mushroom caps (for garnish)


SAUCE:

1/4 C Butter
1/4 C Parsley, minced
1/2 t Lemon juice
1/4 t Rosemary, crushed
1/8 t Salt
2 T Tomato puree
1/4 t Splenda
1/2 C Beef stock

Directions

FILETS:



Combine all filet ingredients except the butter and season salt. Shape into six patties. Press 1 teaspoon of the butter into the center of each patty enclosing it well. Sprinkle each patty with season salt. Chill patties while preparing mushrooms and sauce.



MUSHROOMS:



Melt 1 T of butter in fry pan. Saute mushroom caps and remove from pan, set aside.



SAUCE:



In same fry pan combine all sauce ingredients and simmer for 10 minutes until slightly thickened, keep warm.



Heat remaining butter in large heavy fry pan. Cook filets until only slightly pink in center. Remove and place on serving plate. Spoon sauce and top each filet with a mushroom cap.
