Maple-Glazed Chicken & Vegetables

Ingredients

3 lbs Meaty chicken pieces
1 T Olive oil
1 C Turnips, cut into slices
1 C Carrots, cut into slices
1 C Onions, slices
1/4 t Salt
1/4 t Pepper
1/2 C Chicken broth
1 T Butter
1/3 C Sugar free maple syrup

Directions

Skin chicken. Place chicken in a lightly greased shallow baking pan and brush with oil. Arrange sliced vegetables around chicken.



Sprinkle with salt and pepper. Pour broth over vegetables. Bake in a 425F degree oven for 20 minutes.



In a small saucepan, melt butter. Stir in maple syrup and heat through. Brush mixture over chicken and vegetables. Bake for 20 minutesmore until chicken is tender and no longer pink and the vegetables are tender, brushing frequently with maple syrup mixture.



Trnsfer chicken and vegetables to a serving platter, keep warm. Skim pat from pan drippings and pass the drippings with the chicken.
