Brazilian Style Tuna Casserole

Ingredients

1/2 C Onion, chopped
2 Garlic cloves, minced
1 15 oz Canned tomatoes
1/2 C Green bell pepper, chopped
1/2 C Black olives, chopped
3 Cans Tuna
1/2 lb prepared spaghetti squash

1 t Capers
2 T Olive oil
1/2 t Oregano
Salt and pepper to taste
1/4 C Parsley, chopped
2 T Crushed pork rinds
2 T Parmesan cheese
Butter

Directions

Cook onions in oil until tender.



Add garlic and bell peppers, cook 5 minutes over medium heat until tender.



Stir in tomatoes and cook until tomatoes are tender.



Add capers, olives, oregano, drained tuna and cook 10 minutes.



Season to taste with salt and pepper.



Stir in parsley.



Stir mixture with the spaghetti squash and pour into an oiled baking dish.



Sprinkle with cheese/pork rind mixture and dot with pieces of butter.



Bake in 350F degree oven for 30 minutes.
