Marco Polo Short Ribs

Ingredients

4 lbs Beef short ribs
1 Large tomato, chopped
1 C Beef stock
1/4 C Burgundy wine
1 T Minced onion

2 T Horseradish
1 t Salt
1/4 t Pepper
1/4 t Ground ginger
1 t Xanthan gum (for thickening)

Directions

In large pot brown short ribs, drain off fat.



In crockpot combine meat with remaining ingredients except xanthan gum. Cover and cook on low for 8 to 10 hours.



Turn control to high. Remove meat from pot. Skim excess fat off top of meat broth.



Dissolve xanthan gum in a small amount of cold water. Stir mixture into meat juices in crockpot. Cook on high for 20 minutes or until slightly thickened. Serve gravy over ribs.
