Mummified Mock Mashed Potatoes

Ingredients

Prepare recipe for mock mashed potatoes:

1 head of Cauliflower (or 1 bag frozen)
1 TBSP cream Cheese
1 TBSP butter 1 cube chicken boullion cube, crushed
1-2 TBSP heavy cream
salt to taste

Cooking Instructions:
Preheat oven to 350 degrees. Cook cauliflower till fork tender and drain. Put in a bowl and mash it up real well. It will be lumpy. Add in remaining ingredients adding the cream a little at a time until thick and creamy. Put in oven for about 15-20 min.


For Mummies:

Herbs for eyelashes
Black & green olives for eyes
Sliced radishes for shoes
Carrots for eyes
Red, yellow, green, orange bell pepper slices
Cucumbers
Green beans
Zucchini
Eggplant
Corn Husks (for tombs, decoration only)

Use above ingredients for decorating mummies.

Directions

Prepare mock mashed potatoes and let cool to touch.



Place an unopened corn husk on a plate and put a large dollop (about 3/4 cup) in the center of the husk. Gently mold mixture into the oblong shape of a mummy. Select vegetables to create the mummy's features and choose the approximate location of where to place. Carefully press the vegetables into the potatoes. Make decorative criss-cross patterhn with french green beans over mummy's body. Serve immediately.
