Ingredients

2 Large eggs
6 T Splenda granular
1 1/2 C Heavy cream
1/2 t Vanilla
Pinch of salt

Yellow food coloring
1 C Low carb marshmallows (can purchase here at Diet Low Carb.com)

Directions

Beat the eggs and splenda until well blended.

Add the cream, vanilla, and salt and mix well.

Add yellow food coloring until desired shade of yellow is reached.

Divide the custard mixture evenly among 6 custard cups.

Place custard cups in a large frying pan and fill the pan with water to abuot 1/2" from the top of the cups.

Place pan on medium heat and bring the water to a simmer.

Turn heat down to low and cover the pan with a lid and continue to let the water simmer for ten minutes.

While custard is cooking, cut marshmallows in half and then into thirds.

Turn off heat.

Carefully remove the cups from the water. Allow custard to set and cool for 5 minutes.

Gently stir in 1/4 cup of marshmallow lumps into each cup, they will look like lumps of fat.

Make sure all the marshmallow is covered with custard.

Refrigerate custard cups for four hours before serving.
