| Ingredients: |
6 Bacon slices, crumbled 1 Large Vidalia onion, chopped 1 Clove garlic, minced 16 ozs ricotta cheese 1/2 C Heavy cream

2 T Atkins bake mix 1/2 t Salt 1/4 t cayenne pepper 2 Eggs 3/4 C Green onions, sliced thin (including tops) |
| Cooking
Instructions: |
In a skillet cook bacon until crisp. Remove & drain grease on paper towels.
Cook all onions and garlic in bacon drippings until tender. Remove veggies and drain in strainer.
Combine cheese, cream, bake mix, salt, and pepper. Blend until smooth.
Reserve 3 T of the bacon for garnish.
Stir remaining bacon and cooked veggie mixture into the cheese mixture.
Lightly grease sides of 8 inch springform pan.
Pour batter into pan.
Bake 40 minutes at 350 degrees, until center is just set.
Remove to wire cooling rack and cool to room temperature.
Garnish with remaining bacon. |
